Company Background

The Cook family has been involved in the fish industry for over 40 years, offering the highest quality fresh, frozen and smoked fish at competitive prices. The Company is still family owned and operated. We are situated on the estuaries of the Rivers Severn and Wye, where our involvement in the fish industry began by collecting and marketing wild salmon, sea trout, sea bass and eels for distribution not only locally, but also nationally and internationally.

Fresh Fish

We deal directly with fishermen so that we can have complete accountability for the catch. This policy also gives us the shortest chain of supply, thus ensuring that our customers receive the freshest possible product. Our collection network extends through South and West Wales to the South West of England, where we send a van every night to collect the catch. We also have groups of fishermen on the North East Coast of England and throughout Scotland who land directly to us and send their fish on overnight fish transport to arrive with us the next morning.

The Smokery

The award winning part of the business has the benefit of direct access to this source of fresh fish. The success and quality of our products can be gauged by the fact that we supply some of the Country’s top chefs and food halls. We can proudly list Selfridges, Harvey Nichols, Fortnum & Mason, Harrods, The Ritz, Royal Garden Hotel, Claridges, Bibendum, Hilton Hotels, The Ivy and J Sheekey as regular customers.

We also are very experienced exporters; we send weekly shipments to Italy, Germany, Greece, Dubai, Bahrain and France. We have also exported to Japan, India, Sudan, Nigeria, Singapore, Hong Kong, Jordan and Holland. Once again we target the very top end restaurants and retail outlets.

Our production techniques and smoking processes are still very traditional and our grading, filleting, curing and cutting are still mostly done by hand. We chip all our own Oak wood for smoking, which gives our smoked products a unique distinctive taste. We can either hang or lay out the fish for smoking, depending on your preference. We can also design recipes and specifications to suit any individual requirements you may have.

One of the secrets of our success is that we are always keen to work with chefs and buyers to develop ideas and new products to ensure that our customers are completely satisfied with their finished product.
